Perfect for the fall season, this tasty recipe also packs a nutritious punch. Pumpkin is rich in vitamin C and beta-carotene, which boost immunity & fight infection. By using whole wheat flour, each fiber-filled muffin helps to control blood sugar and helps ward off some cancers.

Pumpkin Oat Muffins

Yields: 24 muffins
Total prep & cook time: 40 minutes

Ingredients

3 cups oat flake cereal
1 teaspoon salt
1/2 cup sugar
2 ½ cups whole wheat flour
2 ½ teaspoons baking soda
1/2 tablespoon dried ground ginger
1/2 tablespoon cinnamon
1 cup golden raisins
1 egg, beaten
½ of 15 oz can of pumpkin
1 teaspoon vanilla extract
2 cups low-fat buttermilk
2/3 cups canola oil

Preparation

  1. Preheat the oven to 400 degrees. Line 2 12-count muffin pans with paper liners.
  2. In a large bowl, mix together the quick oats, salt, sugar, flour, baking soda, ginger, and cinnamon. Stir in raisins.
  3. In a separate bowl, combine the eggs, pumpkin, vanilla, buttermilk and canola oil. Stir these ingredients until they are blended. Mix the wet ingredients with the dry ingredients until the batter just holds together. Do not overmix. 
  4. Fill each cup liner ¾ full, and bake for 17 minutes.
